Strawberry Rhubarb Pie

Ingredients: – 2 1/2 cups sliced rhubarb – 2 1/2 cups sliced strawberrie – 1 cup granulated sugar – 1/4 cup cornstarch

– 1 tablespoon lemon juice – 1 teaspoon vanilla extract – 1/2 teaspoon ground cinnamon – 1/4 teaspoon salt – 1 package (2 crusts) of ready-made pie crust dough or homemade pie crust dough

Instructions: 1. Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the sliced rhubarb, sliced strawberries, granulated sugar, cornstarch, lemon juice, vanilla extract, ground cinnamon, and salt. Mix everything together until the fruit is evenly coated.

1. Roll out one pie crust and place it into a 9-inch pie dish. Trim any excess dough hanging over the edges. 2. Pour the strawberry rhubarb filling into the pie crust, spreading it out evenly.

Roll out the second pie crust and place it over the filling. You can leave it whole, make a lattice crust, or cut shapes out of the dough for decoration. Crimp the edges of the crusts together to seal the pie.

1. If desired, brush the top crust with milk or beaten egg for a golden finish. 2. Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
