Roasted Broccoli Rabe Grilled Cheese Sandwich Recipe

As kids, most of us loved grilled cheese sandwiches with creamy tomato soup. The classic childhood sandwich had toasted white bread and gooey American cheese.

– 1 bunch broccoli rabe (about 12 stalks) – 4 tablespoons olive oil, divided – 1 teaspoon salt – 1 teaspoon pepper – Juice from ½ lemon – 1 tablespoon red pepper flake – 1 shallot, thinly sliced – 8 slices bread – 4 tablespoons spreadable butter – 16 ounces mozzarella, sliced – 8 ounces fontina, sliced



Set the oven temperature to 425°F. Arrange the broccoli rabe on a baking sheet covered with foil.

Toss with ½ lemon juice, salt, and pepper. Roast until extremely tender, 15 to 20 minutes.

To keep it like new, stick with oven heat. Add some red pepper flakes on top.

 Meanwhile, place a skillet over medium heat with the remaining 2 tablespoons of oil.

Add the shallot slices and stir continuously for 3 to 5 minutes, or until they become crisp. On one side, butter each slice of bread.

Arrange the fontina, broccoli rabe, and mozzarella on the plain side. Add crispy shallot on top.

Use your oven to bake until the cheese has remelted if you don't have a toaster oven.

Place the sandwich in a heated skillet over medium heat, buttered side down.

Press down after adding the top piece of bread. Cook, then turn, until bottom is golden brown.
